Grenadian Barbeque Spice Rub Recipe Showcases Island’s Favorite Spices
St. George’s, Grenada, June 20, 2002 – As the summer barbeque season gets into full swing, what better way to add a little Caribbean zest to your favorite grilling meats than with an authentic spice rub recipe from Grenada.
Known as the “Spice Island of the Caribbean,” Grenada is famous for spice production. In fact, more spices are grown per square mile in Grenada than anywhere else on the planet! Visitors to the island can’t help but notice the scent of spices on the balmy breeze wherever they go and taste their rich flavor in a wide variety of Grenadian cuisine. Nutmeg, cinnamon, mace, allspice, ginger and vanilla are just some of the many delicious spices grown on Grenada.
Below is a barbeque spice rub to give your favorite grilling meats a kick of genuine Grenadian flavor this summer. Slather on steaks, burgers, chicken, pork, etc. before firing up the grill:
Grenadian Spicy Barbeque Rub Yields enough for 10 – 15 pounds of meat
½ cup of catsup
2 Tbsp. brown sugar or ¼ honey
1 Tbsp. mustard
1 tsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. onion powder or ¼ finely chopped fresh onion
1 tsp. ground allspice
1 tsp. ground nutmeg
½ tsp. ground mace
1 Tbsp. dried thyme
1 Tbsp. paprika
¼ tsp. black pepper
1 tsp. salt
*For hot spicy flavor, add one crushed red hot pepper.
*For zesty lemon flavor, add 1 Tbsp. of lemon juice.
Mix all ingredients together and rub 1 to 1 ½ Tbsp. of seasoning for each pound of meat.
